1 teaspoon Organic Coconut Oil, High Heat Cooking

1½ cups prawn tails, shelled

Natural Herb Salt

¼ cup brandy or sherry

1 can Organic Tomatoes, Chopped with Basil

1 can Organic Tomato & Basil Soup

½ teaspoon Vegetable Bouillon Broth Powder

½ cup water

¼ cup Organic Amaranth

½ cup cream

½ cup fresh basil, finely chopped


Heat coconut oil in a frying pan at medium heat. Add the prawn tails and sprinkle with herb salt, cook for 1-2 minutes each side. Add brandy, turn up the heat and deglaze the pan. Remove from heat and set aside. Retain the pan juices.

Place the chopped tomatoes in a saucepan and use a stick blender or potato masher to puree the tomatoes. Then add the soup, bouillon powder and water. Turn up the heat, add the amaranth and simmer for 15 minutes with lid on.

When the grains are cooked, add the prawns and pan juices, and fold in the cream. Check consistency and seasoning, adding more water or cream for a thinner soup. Serve garnished with fresh basil.
