EASY CACAO QUINOA MOUSSE

Ingredients

1/2 cup Organic Quinoa, White

1 can Organic Coconut Cream

4 Organic Whole Pitted Dates, Deglet Noor soaked in hot water for 15 minutes

1/2 cup Organic RAW Cacao Powder

4 tbsp Organic Maple Syrup

1/2 tsp Organic Vanilla Extract

pinch sea salt

Method

Cook the quinoa according to packet instructions. Set aside to cool in the fridge for 20mins.

Add all ingredients to a high-speed blender with the quinoa. Process to a smooth and creamy consistency. (You can add a little water if you think it’s too thick).

Pour mixture into 4 ramekins and then place in the fridge overnight to set.

Serve with your favourite toppings such as nuts, desiccated coconut, cacao nibs or berries.
