Ready in 15 | Serves 2
½ cup Organic Chickpea Flour
½ cup Organic Buckwheat Flour, Mini-pack
3 tablespoons Organic Corn Starch
½ teaspoon baking powder
¼ teaspoon flaky sea salt
3 tablespoons Organic Ground Chia mixed with ¼ cup warm water
1 tablespoon Organic Coconut Oil, High Heat Cooking
1 cup warm water
Mix together dry ingredients. Add wet ingredients and mix well to form a batter of ‘yoghurt’ consistency.
Lightly oil a fry pan. Once hot add a dollop of batter, spread thinly. Cook for 2 – 3 minutes on one side, then flip and cook for a further minute.
Serve immediately or, if making in advance, simply warm through in the oven or microwave before serving. These are best eaten within one day.
