Ingredients

FOR THE NOUGAT

1 cup Organic Cashews, RAW Whole (soaked for at least half an hour then drained)

¼ cup Organic Coconut Milk

¼ cup Organic Raw Cacao Paste

¼ cup Organic RAW Virgin Coconut oil

2 tablespoons Organic Coconut Nectar Syrup

1 tablespoon Organic RAW Maca Powder

FOR THE CARAMEL

¾ cup Organic RAW Pitted Dates

¼ cup Organic Cashew Butter

2 tablespoons Organic RAW Virgin Coconut oil

2 tablespoons filtered water

pinch of Natural Sea Salt

FOR THE COATING

¾ cup Organic Raw Cacao Paste

2 tablespoons Organic Coconut Nectar Syrup

2 tablespoons Organic RAW Virgin Coconut oil

Method

Blend soaked cashews and coconut milk in a high speed blender until ultra smooth.

Melt cacao paste by sitting over very hot water. When the cacao paste is almost melted, add in the coconut oil and stir until the mixture is liquid!

Transfer the cacao mixture into the blender and add in the coconut nectar and maca powder, then process until smooth.

Grease and line a 6-inch square tin with baking paper. Pour in the mixture and place in the fridge for 1-2 hours until the nougat is firm to the touch.

To make the caramel, blend dates into a paste. Combine with remaining caramel ingredients and spread evenly over firm nougat. Pop the tray back in the fridge for a couple of hours to set.

Once chilled and set, remove mixture from tin and slice into eight bars. Slice a tiny bit off each corner of the bars and smooth with your finger to round them off so it looks like the real thing. Place bars on a tray and keep in the freezer for at least two hours or even overnight before coating them in chocolate.

To make your chocolate coating, melt cacao paste like you did for the nougat. Blend remaining chocolate ingredients until smooth. Transfer mixture to a bowl and, one at a time, dunk your bars into the chocolate. Carefully remove with a fork to get the excess chocolate to drip off before transferring to a tray lined with baking paper.

Once the chocolate begins to set, drizzle with remaining chocolate in a somewhat random way.

Place in the fridge for an hour to allow the chocolate to firm up completely. Keep any left over bars (if there are any) in a BPA free plastic container in the fridge. They will keep for up to five days.
