LENTILS WITH HUMMUS & OLIVES ON TOAST

Ingredients

4 tbsp vegan butter or butter

1 clove garlic, minced

2 cups mushrooms, sliced

2 large kale leaves, chopped

1 can Organic Brown Lentils

2 tsp Apple Cider Vinegar

TO SERVE

Hummus

Toasted Sourdough Bread

Organic Kalamata Olives, Whole With Pits chopped

Salt & pepper

Parsley, chopped

Method

1. Drain lentils and rinse. Set aside.

2. On a hot frypan, add butter, garlic and mushrooms. Once that has cooked a for few minutes, add kale and cook until softened. Now add your lentils and stir for a minute before adding apple cider vinegar.

3. Get your toasted sourdough and spread hummus on first before topping with your lentil mix. Sprinkle with parsley and olives, then season with salt and pepper to taste.
