1 can Organic Coconut Milk (refrigerated overnight)
3 to 4 tablespoons Organic Peanut Butter Smooth, Original
2 tablespoons Organic Coconut Nectar Syrup
Scoop out the solid coconut solids from your can and transfer into a bowl. You can reserve the liquid for smoothies.
Using a hand or electric mixer, beat until creamed, light and fluffy – about 45 seconds.
Add the peanut butter. If you love the full on peanut butter flavour, go for all 4 tablespoons! Add in the coconut nectar syrup and beat until combined.
Pour into two glasses or small jars and place in the fridge to chill for a couple of hours, until set into a mousse.
Reserve any leftovers in an airtight jar in the fridge. It will keep for a week.
