500g natural yoghurt (thick)

500g mascarpone

3 tablespoons Organic Golden Sugar

2 cans Organic Peach Slices (reserve ½ cup syrup)

½ teaspoon almond extract or Amaretto liquer

1 pack sponge fingers (biscuits)

white chocolate or Amaretti biscuits


In a mixing bowl, whisk together yoghurt, mascarpone and sugar until well blended.

Mix peach syrup and almond extract in a small bowl. Quickly dip the biscuits in the syrup (just wet but not soggy) and line the bottom of serving glasses.

Cover biscuits with a thin layer of the cream mix, add a layer of peach slices, then cover with the cream mix. Continue layering until the glass is nearly full.

Top with chocolate shavings or crushed Amaretti biscuits. Refrigerate at least two hours before serving.
